Here are some pics of my thanksgiving adventure, have only done about 5 or 6 smokes and ventured into turkey for thanksgiving...glad I did.  It was juicy, tender, and full of awesome smoky flavor.  And cold leftovers were amazing too!

13lb bird went in around 10 or 11 am...

About 6 hours later it hit the right temp and began to rest.

The dark meat was unbelievable, it really took on the smoke very well.

The stuffing we made separately and in the oven, because I wasn't sure if it could go in the turkey for smoking, just worried about the raw poultry thing.  Is it safe to do?
 
The turkey looks perfect!

You really put together a nice Thanksgiving meal.

It's not recommended to put stuffing in a smoked turkey, especially if you have eggs & milk in it.
 
Fantastic looking Bird!!

 Do not try the stuffing in the turkey on a smoker.

 Just not high enough heat in a short enough time to be safe.
