I've done spare ribs many times in the past on the grill with good results. This is the first time I've smoked them.

Before trimming.

I trimmed the ribs myself thanks to the tutorial on SMF. I rubbed the ribs with Jeff's rub, and the trimmings with a rub I got from a friend who does comp que. Put them in zipper bags for the night in the fridge.

I got sidetracked and put them in the smoker without getting pics.

Mid smoke.

Smoked them using the 3-2-1 method at 220 using hickory. I spritzed a couple of times using a mix of apple juice and capt morgan. Next time I think I'll do them 2-2-1. They were literally falling off the bone to the point you couldn't pick the things up.

The ribs were a big hit with everyone. I gave some of the trimmings to Dan and the kids to try the rub. They didn't like it, said it was too hot. Wimps.

I have 40 pounds of ribs in the freezer and family on the way later in the month. Can't wait to give them a try. Hope they look anywhere near as good as yours! Points!

Ribs look awesome! Looks like you are an ol' pro...never would have guessed those were your first racks. Nice pull back.

Looks great nice job

Good looking ribs, Dawn. I'm with you on not having them fall off the bone. I like them just so you have to pull the meat off with your teeth.

They look great Dawn. Thx for the view.

Great looking spares Dawn, congrats. I think you'll like the 2-2-1 method, that's where I've settled on spares. Did you find spares easier to trim than Dino ribs?

Nice. Looks like you were busy this past weekend. I agree with the 2-2-1 method I find the bone comes off clean and you can pickem up, my .02.
Points.......

So far the dino ribs I've gotten haven't needed to be trimmed. The spares were very easy to do. I was pleasantly surprised at how easy it was.
