I've done spare ribs many times in the past on the grill with good results. This is the first time I've smoked them. Before trimming. I trimmed the ribs myself thanks to the tutorial on SMF. I rubbed the ribs with Jeff's rub, and the trimmings with a rub I got from a friend who does comp que. Put them in zipper bags for the night in the fridge. I got sidetracked and put them in the smoker without getting pics. Mid smoke. Smoked them using the 3-2-1 method at 220 using hickory. I spritzed a couple of times using a mix of apple juice and capt morgan. Next time I think I'll do them 2-2-1. They were literally falling off the bone to the point you couldn't pick the things up. The ribs were a big hit with everyone. I gave some of the trimmings to Dan and the kids to try the rub. They didn't like it, said it was too hot. Wimps.
