I finally got the bugs worked out of the rig i've been working on the last few weeks and decided to give it a try..
I wanted to do something basic the first time so incase i messed up i wouldn't feel too bad.. So i grabbed some sams club steaks out of the deep freezer, let them thaw in the fridge for a day or so and got to work.
they were marinaded in Soy sauce for a while, then rubbed down in Old Bay, some pepper and cajun spices.. after i got the smoker to around 220F or so they were tossed on..
after about an hour
Flipped at 2 hrs
right around the 3 hr mark they reached about 165F internal so they got pulled, cooled and quickly eatn..
I still need to work on temp controll and maybe brushing them with something to keep them a little more moist but overall it went pretty good. I used soaked hickory wood chips in a cast iron box.
I think something bigger and better is in order for next time, maybe some ribs..
Any tips/tricks are much appreciated.
