Just finished my first smoke using all the help written around here. Thanks for all of that!
I did a whole chicken because I wanted to try it instead of halving it. I also smoked a pork butt with it. The chicken was covered in olive oil and then a garlic peppercorn rub. The pork was smothered in honey (I'm mildly allergic to and dislike mustard) and then rubbed in a mixture of chili powder, cayenne, onion powder, garlic powder, paprika, cinnamon, cumin, pepper, salt and brown sugar. I cooked them at about 250F using peach wood for the first half and then hickory for the last few hours. The chicken finished earlier and was ready for a late dinner so it was mostly done in the peach.
Here's what you really want though, pictures:
Roman hard at work guarding the smoker from the pesky neighbors.
A short while in when I realized I had forgotten to fill the water bowl!
Oops, lesson 1: pork will drip on the chicken below!
Good timing Amazon! The Amazen got delivered about half way through.
Chicken's done! I may have been too anxious and forgot to take a picture of the finished bird....
Double smoked?
Roman still being a good guard dog. He's hoping there's payment in it for him...
Pork's done!
And the first sandwich. Didn't have any buns, just some sourdough unfortunately. I toasted it with my new Searzall just for the fun of it.
