First Smoke

  1. I just purchased a MES 30 Gen1 smoker. I plan on curing it this Saturday and want to cook on Sunday. I like turkey so I thought smoking a turkey breast (bone). I was thinking about doing two - one for the family and one for work party on Monday. The local grocery has 8-9 lbs. which I thought was large.

    Thoughts on doing two 8-9 lbs turkey breasts for my first tiime?

    I think that would work fine for you. Nice easy first run. If you have a remote meat thermometer you can keep an eye on it as it cooks. Enjoy your new smoker and welcome to the club!
     
  3. Thanks for answering. Do you think those are large turkeys?

    I did my research and bought the a-maze-n smoker pellet tray, propane starter, and the Maverick 733 thermometers.

    I will make a suggestion, why not go ahead and do something really simple like a chicken for Saturday night after you cure the smoker. Very simple, leave it whole, rub with oil, dust the cavity with salt & pepper. That way you have a non-impotrtant smoke before you try to impress friends and family.

    It gives you a chance to feel out your smoker with no pressure. Then the next day you woe 'em with your turkey.

    That is my very best suggestion I could offer. Never start off cooking for family and friends.... it leads to looking up the number for pizza hut too many times though no fault of your own.

    You should be able to get two bone-in breasts in the MES. Try to get them both on the same rack, it balances out temps better and try to keep them from touching so the smoke can surround the meats.

    Wise advice on cooking things for guests before you've got it all figured out. Depends on how you and your guests relationship is. When we had folks over and I couldn't predict within an hour when dinner was going to be I told my wife that she can tell the guests to wait or hit the hot dog wheel at conoco ;)

    been there and done that. Bets are all off when you are on the hook.
     
  9. Today was the maiden smoke. I decided to take the advice given and go with chciken. There is a fine meats place close and he puts together stuffed whole boneless chicken. I cooked two and they came out great. All the accessories I purchased worked great. The AMNPS worked greate - no problems.
