First smoke: whole chicken breasts

  1. Did my first smoke on my new MasterBuilt dual fuel today. After spending the last two days modifying and seasoning the smoker, I was really anxious to get it up and running with some meat in it! I did 8 whole breasts. I didn't brine them, but I coated them with mustard and my homemade spice rub. Smoked them with hickory at 275 until the IT was 165. Took about 2.5 hours. The skin came out crispy and the meat was super moist with not too heavy of a smoke flavor. All in all I'm gonna call this one a success. Can't wait to fire her up again.

    Looks great! Give Brining a try. It makes a big difference...JJ
     
  3. I will definitely try the brining route. I'm going to go get a new cooler that will be for brining only. I was in way too much of a hurry to get smoking to do it this time!
