Hello.  Welcome.  I see this is your first post.  Please take some time and swing over to Roll Call and introduce yourself so that we may give you a proper "Hello".  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  As for your question:  Brisket has a mind of it's own.  two 5lb briskets may well finish a couple hours apart.  I don't know what experience you have but the title says first smoke.  Based on that I would not start with brisket.  More info would be helpful.

As Danny says, you'd be better off starting with Chicken or a nice Butt. Brisket will have you cursing and is likely to Jade you from smoking at all ,which would be ashamed.

Starting out Smoking is like taking your first steps . Start small and take little steps. You need to learn your Smoker , it's operation , heat control , how to season it (like an Iron Skillet) , the best fuel for the job , food handling safety , cuts of meat and the

proper cooking techniques of each type and  what smoke does to meat (Creosote , Smoke color for best results ) and incorporate all this into practicing the skills.

I'm not trying to scare you , just as in any job , you need to learn certain things. In BBQing , however the learning is fun and productive. You must Practice on one type until you get comfortable then move on to better things.

Practice and learn patience. Those are the two most used skills you'll need to BBQ confidently.

Have fun on your journey through BBQ Nervana , and as you go . . .

Thanks for your advise!!!

I get what your saying and I will start smaller and learn.....Tonight is salmon.....got some cheese I would like to try as well.

In two weeks it will be the 11th anniversary of this camp trip and thats when the brisket is coming out,  Yes I hear you and understand what you are saying, Ill have the smokies on back up!!!!
