First smoke on the Longhorn - Spare Ribs w/pics

    Last week my new OKJ Longhorn arrived and after doing a few mods I was able to season it yesterday with the intention of doing some ribs today.  I started with a nice set of spare ribs and removed the tissue covering the bottom of the ribs (and the slab of meet on the rib) and applied a good KC rib rub.  Let it sit overnight and followed up with another light coating of rub.  I decided to use the 3-2-1 method for ribs which I have to say is working great.  I smoked them between 250-275 degrees and used a steady smoke of Apple, Hickory, Oak and a little mesquite.  Right now I have them in foil for the two hour part.  Should be ready in an hour and a half!  I tried that little piece of meat from under the rib and it was great.

    About my mods...after doing alot of research on this forum I added the elbow vent to the smoke stack, made my own firebox, and sealed the smoke stack/elbow with some high temp gasket caulk.  On a side note I tried using the gasket caulk with wood stove gasket and didn't get the results I wanted so I ordered more window gasket that is thinner with adhesive backing.  That should do the trick.  I am also anxiously awaiting my Horizon convection plate and a maverick ET-732 and a Tel Tru thermometer in the coming week.  So far so good....
