I had planned on doing chicken quarters today but when I checked I noticed I had bought split chicken breasts. They still turned out pretty good. Unfortunately I had some issues with time management and I cooked them too low so the skin turned out really flavorful and limp.. Oh well the chicken was still really good!
 
Those breasts look Awesome!!! Great color and I bet they were juicy!! Don't be afraid to crank it up with chicken, will crisp the skin, cook faster and still be just as juicy! Congrats on the first WSM smoke!!
 
I usually do chicken higher on my wsm. I've dun it a few times with nothing in bowl and worked fine. What I usually prefer to do though is on something that doesn't take long to smoke hit it reall low around 200* and then do the last 15* of cooking to temp on a hot BBQ. That's the only way I do tri tip.
 
After you smoke the chicken you can either toss it on a hot grill or under the broiler of the oven to crisp the skin up. I always do my chicken low and slow - it stays very moist and tender that way.
