Tomorrow will be the first smoke of the year.  Finally after the long cold winter.  Cleaned out the freezer with a slab of baby backs and a couple of chicken thighs.  Also picked up a 1.5 lb spencer chuck roast.  Will be my first one so wish me luck.  Also will be trying out the new Maverick ET733.

Prepped and in the fridge


1/2 slab of ribs with mustard and modified Jeff's rub (easier to handle 1/2 slab)

Roast on. Found out that temp gauge is around 70 degrees off. Should have done a test first. Have dampers shut down to bring temp down. Should save on charcoal lol.
