First Smoke of the Season

  1. We have had some really nice weather, unusual for this time of year in WA so I was able to bust out the smoker and do up some chicken quarters.  Used my personal rub and smoked them with Peach Wood and Persimmon wood using an indirect method.  Total cook time, approx 2 hrs.

Did another smoke with Leg Quarters last night, using only the peach wood this time.  The flavor profile of the smoke is very mild, adding only the tiniest bit of flavor but, what it did do is enhance the natural sweetness in the chicken and in the spices in the rub.  Gave us a really nice sweet, hot profile (from the ancho chili powder in the rub).
