Last week I completed some basic mods to an ECB smoker. Today I did my first smoke. St.Louis style spare ribs using the 3-2-1 method. Very pleased with how it went. For the most part I was able to maintain temps in 225-250 range. Ribs have good flavor. The rub is much saltier than I prefer but it was a store bought rub.

I will echo OldSchool - Jeff's rub is awesome - plus if you order it, it helps pay for this forum.

After being on this site, I do not think I will ever buy a rub or sauce in the supermarket
