This was my first smoke in my freezer conversion. Was very happy how it turned out, ribs and beans were good, smoker was very consistent. Only thing I need to do is switch over to chunks instead of chips so I can get more smoke on the meat.
Looks great I do the fridge build also, I use the same element as you but I use the AMPTS for smoke works great. Are you running a PID for controlling your heat?? What temp can you get it to?? Looks good.
I am using this stepless speed control for temp control at the moment.
I plan to use a PID eventually but didnt want to spend the money for one until I knew how the smoker would perform.
I was able to get it up to 290 degrees when I seasoned it. It was 20-30 degrees outside the day I seasoned it, so I am sure I could reach 300 degrees in nicer weather. I have no need to go over 275 degrees though.
