Two Racks of baby backs.  Rub is Stubbs as is the sauce.  

Heat was hard to dial in and I used an internal oven therm to 

help (lower left of the photo below)  I approx the temp was

230-250.  The wood used is apple chips not chunks.

One issue is having to slice the racks in half to fit the smoker racks.

Here they are at 2.5 hours... just about to wrap with sauce.


Here they are sauced and sitting prior to eating.


They were in between fall off the bone and not.  The taste was excellent and the texture good, not mushy.  Next time, however, I think I will try to mix it up a bit more.  2-2-1 would have been better I think... maybe even 1.5 in wrap...
