Today was my first attempt at smoking. Did two full racks of pork ribs. Folks came over for an early dinner and I am very excited to say they were tender, juicy, and fell off the bone. Thanks to Bear for helping me along. Followed his guide and did a hickory chip 2.5-2.5-1 with mustard, home made rub, and apple juice. My dad and I both thought the hickory was a little strong, but the ladies loved it. We're excited to read and learn from all of you generous folks and look forward to many more smokes!
