3 pound trimmed Tri-Tip

I used a store bought rub,covered in plastic and let sit in fridge over night

I smoked for 2 hours at 225-245 using mesquite chunks.I pulled it when it 139,I foiled and let it sit for 15 minutes.

It was tasty but I will pull it at around 144 next time..That way the wifey will eat it.I was by myself and like it a little rare.

Im going to tackle ribs next
 
Looking Good!!  Costco had some nice tri-tips last week and I didn't get 'em. Now I have to back! Nice job!!  Can you give wifey the cuts from the small end? That's what I do for my "I prefer medium" hubby.  Or I pull @ rare to rest; after the juices have had time to settle a bit, I cut a chunk and throw it on the grill or under the broiler on for the non-bloody types.  You doing pork or beef ribs next? There's more info and help than you can imagine here, if you need it.  Cheers!
 
I would let the outside of that cook a while before probing if you are going to take it off at those low temps.

The color looks great.

Next time ts with throw some beef broth in a pan under the Tritip and when it is done defat the broth and you can use it for French Dips

I sure love nice RED meat!. I just have to find one of these tri-tips. I am a Cosco member so maybe I can find one to try. You cooked that one just like I love my meat to be done.

The only one I've ever tried was at the gathering (Jerry's) and Brian brought it from Cali.

It was great but you can't find them around here for some reason!
