First...simple but different

    Here is my first fattie.  Thawed out the last of the deer meat and used thick cut bacon.  Used the left over bacon and cooked it and sprinkled it in the middle before I rolled it.  So far I've read about 1000 different ways to do these, kinda like everything else lol!  Can't wait to eat it...

    Using the 30 gal UDS for this one

    What kind of smoke did you use and how long did it stay in the uds?

    Used  3 chunks of soaked apple wood and took roughly 2 1/2 hours to hit the 160 temp.  That was actually the fastest I've smoked anything.  I'm used to 8+ lbs of food lol!
