First shot at Canadian Bacon, will make again for sure!!!

    I finally tried my hand at Canadian Bacon and boy was I surprised at how good it came out for the first time!! I used POP's brine for 12 days with three 2 pound pieces of pork loin, cold smoked several hours with cherry wood then added heat until 145 degrees. Smoky, sweet and tasty!!
