First run with WSM - ABTs and bacon kabobs

    Well I ran my WSM for the first time today. I had issues at the beginning and in the middle but all in all I love this thing. It is much easier to use than my GOSM BB and much more fun (and better smoke quality) than my MES. I know this will become my go-to smoker.

    I used RO lump and I liked the product but hated how it was handled. Most of the lumps are so small they will fall through the Webber chimney. Yes, that small. So that caused me to need to feed the fire about every 45 minutes to an hour. I tried doing the minion method but something went awry (I will try again tomorrow) but all is good in the end.

    For the ABTs I did the typical cream/cheddar cheese mixture. I do 50/50 by weight (the same thing I do for my fried poppers). I then used the leftover bacon by putting my rub on it and putting it on skewers. It wasn't at all like pig candy because it wasn't sweet. Let me just say that I WILL be doing this bacon again. It was absolutely amazing. I can only describe it as pig jerky because it had the bite/flavor of jerky. My brother and I just stood there eating it staring at each other, unable to talk. When he finished he just said "You could sell this".

    I'm sorry for the skimpy q-view but I forgot to take final pictures until I was almost out of the subject.




    Tomorrow I will be doing more bacon and chicken or turkey for dinner and then I will be smoking my chili for lunch.

    They both look great, but I really like the pig jerky.

    Thanks all.  I really love this smoker!

    I really can't wait to do the jerky again. I will make one change. I will replace all of the salt with more sugar (equal by weight) in the rub. As is it is salty like bar snacks but still quite enjoyable. The saving grace was the turbinado sugar in the background. The slight sweetness took the bite away. It did have an amazing pepper flavor and this rub certainly isn't black pepper heavy. This bacon was a very thick cut. It was the thickets store-bought bacon I've ever had. I think the thickness was key to the success.

    My brother ordered 10-12 chicken legs for his family (if I can't find Turkey legs) for dinner tomorrow.  So I think I'll see how much chicken/turkey I can get on the 18.5 WSM, as well as beans or mac-n-cheese....more bacon of course.
