This is my first post in this section, I have been researching in here and found some great ideas. I just finished my build which is over in the reverse flow section. Sat will be my first real run at doing some serious smoking on this rig. I have been using one of the lowes box type propane smokers up until now. My cook saturday will consist of two butts, 4 racks of ribs, and adding some veggies and corn near the end of the cook. My question is: what is the best way to prep the butts, brine or no brine? after I rub and maybe lightly coat with some mustard, add the meat to the smoker, should i baste or spray something on the butts periodically? I am aware that my goal for internal temp is around 195-200, as far as the ribs go, what types/cuts turn out well, what type of prep is best? what are good rubs and sauces, how to tell when they are fall of the bone perfect? I have smoked alot of butts and they were all pretty good but I am looking for great! and I have little experiance with Ribs!

Ohh Should I inject the butts, if so what with?

Thanks

The questions you ask are mostly personal preferences, there are many ways to smoke butts & ribs. I'll give you mine.

My question is: what is the best way to prep the butts, brine or no brine? No brine, coat with yellow mustard & your favorite rub. after I rub and maybe lightly coat with some mustard, add the meat to the smoker, should i baste or spray something on the butts periodically? I don't, smoke with the fat side up & just let it go. am aware that my goal for internal temp is around 195-200, For the butt, yes. as far as the ribs go, what types/cuts turn out well,BB's or Spares, I do both, spares take a little more prep. what type of prep is best? mustard + rub, with extra brown sugar just before you put them on.what are good rubs and sauces, Jeff's rub & sauce is very good. how to tell when they are fall of the bone perfect? Grab 2 ribs & pull them if they tear like paper, but the bone doesn't pull out clean there done. Check out the 3-2-1 method, it works every time for fall off the bone ribs. I have smoked alot of butts and they were all pretty good but I am looking for great! and I have little experiance with Ribs!

Ohh Should I inject the butts, if so what with? I don't.
