First run at Fattys with Pics

I probably could have gone the rest of my life and not known that a roll of sausage was referred to as a "Fatty". But, after reading this forum for an hour this weekend, I decided to give it a try. I wanted to make a naked fatty, and use it as the control piece, to decide if I liked other ingredients or not.

I rolled out the other two and added green peppers, onions, mushrooms, shredded cheese and tomatoes to one, and just green peppers, shredded cheese and onions to the other.

Here they are after the first hour, after just getting turned. I put wood chips in my water pan, to see if I could get more flavor. I don't think it made a difference, but it looks kind of cool.



Here they are sliced and diced on my cutting board. Naked fatty on the left.



The final verdict is that they all turned out excellent. Very good cold also. Now I can see why everyone fixes them as snacks while the "real" meat is cooking.
 
Those snacks are the REAL deal.

I agree. I'm also a home-brewer. I'm not sure there's a better way to spend a Saturday, then sitting on the deck, watching meat smoke, while enjoying a frosty one.

Don't get me wrong... There's better ways to spend your night....

But, I tried my first fattys about a week ago. One nekkid JD Regular and one nekkid JD Hot. I have to admit, when they came out of the smoker and were warm, I tried some and they were really not that appealing to me. I don't know why, have to try again next time. But, I put them in a baggie and in the fridge, next day it was snack time so I pulled the fattys out and grabbed some Ritz crackers.

Now that was GOOD stuff.

More fattys in my future.

Are those wood chips in your water tray??? If so how come. do those go into your smoker box from there?? I'm a newbie also but have learned alot from these forums.
 
Hey I jumped the gun and didn't read the whole thread at first after I saw the chips in there, my bad. But those fattys look good. I didn't know what a fatty was until I got on this site and did some up this weekend. The first two went so fast with everybody I did four more Sunday. Simply amazing. 52 and learning all the time

You know, I'm with hhookk on this one, still experimenting with ABT's.
I know I'm gonna take some heat for what I'm about to say...but I'm not really impressed with fatty's

not much to them compared to the burn, texture and taste of ABT's. That is, of course, my $.02 cents...

BF did you use Jimmy Dean or just any breakfast sausage. I used a store brand for my first ones and almost never tried them again. Fortunately I did and used JD this time and now I love them
 
I am at the same stage as you. did my first Fattys today. Yours look fantastic. I am happy with mine too. I just need to get this temperature situation under control.

Sounds like something both of will try again.

I used a local brand. I'll say that my second attempt was better than the first. For the second one, I flattened it out, put some colby-jack cheese in, re rolled it and then put some rub on it...it was much better than the first one but I'm still not hooked. I'll give ol' JD a try next time
