I've been wanting to do some baby backs so my first attempt went in about an hour ago. I used the same rub I put together for brisket and also picked up a pound of salmon fillet for my daughter and girlfriend which will go in when there's about an hour left on the ribs. Cornbread, baked beans (cheating with Bush's) and a salad. Oh, and some real good IPA.

Nice!! Like the sound of that IPA. Smoled my first baby backs last week using 3-2-1. Next time i think i'll go 2-2-1 as they were slightly overdone. Best of luck!
 
Nice rack! I love me some baby backs! You really can't go wrong with 2-2-1 on BBRs. Just give them a bend test to make sure they're done to your liking. Some folks test with a toothpick, I'm gonna try it next time- less messy. I learn something new here just about every day! Happy smokin', David.

I'm using apple chips. I did 2 in the smoker, 1.5 with apple juice and BBQ in foil and about one hour to go unwrapped and sauced. I'm modifying the technique based on my time constraints today. I will post after photos and how it all turned out. Hungry...
