First ribs on the MES 40... Wish me luck!

  1. OK, after dry-brining followed by a rinse and a dry-rub... Here they sit, waiting for grill time:

    And a few hours later, loaded up on the MES 40 (2nd gen) set for 230...  Going for 2-2-1 based on the many threads I've read here... We'll see how they work :)

    They look great and following the 2-2-1 method, success is almost guaranteed.  Good luck.
  3. OK... the 'done' photos didn't work, but the ribs (and baked beans) were AMAZING...  Thanks to all of your great tips, my first ever time smoking ribs was a total win.
