first rib roast

Its 17 with a windchill of 2 degrees. Everyone else is warm in bed. Not me... Maybe they are right, I might be crazy. Oh well...

Anyway gonna start by doin an Okied chuck roast. Later Ill put on a 4# ribeye roast. Figure it wont take as long to reach 130 internal. Hope I get the timing right.
 
About the rib roast, I bought a 17# ribeye to slice and freeze for steaks.
3.85 a lb. for choice ribeye I couldnt pass up. Then decided to hold on to this one chunk for the smoker. Thought my wife was gonna flip but she finally agreed. This better turn out right. She only got 11 steaks you know.

The temp outside is up to 26 now. Life is good. The chargriller is runnin steady at 247. The chuck roast is thouroghly seared and on the smoker along with a buffalo fatty. Kind of a contradiction there. Buffalo and fatty.
My wife brings me a pound of ground buffalo and simply says "fatty".
Maybe she was talkin about me. I dunno...
Filled with pepperoni, sundried tomatoes in oil, and tons of cheddar. should be enough to keep it from dryin up on me.

Dangit! While Im in here grieving over missing points the temp in Ol Rusty spiked to 313. that last gust of wind musta helped stoke the fire a bit.
