I bought a whole chicken and a rack of ribs (whole loin) last night that I intended to smoke this weekend but my kids insisted I had to do the chicken tonight since I worked from home today.

I rubbed it down with a rub from the Peace, Love and Barbecue and let it rest in the fridge for a while. When it was time to go I dropped it on top a beer can holder with a can of water a splash of cider vinegar and half an onion in it.

Now for the qviews. I got a little ahead of myself at the end though and started cutting it up before I took a pic of the finished product.

Doh! It came out great, very tender and juicy. Not much smoke ring but it was there. I used apple chips and even threw in a couple of briquettes to try to help the ring formation. My 8yo daughter is a pretty picky eater and she loved it.
