Did my first overnight smoke last night...  This was a practice run, I have to make one for my son's HS graduation party in 3 weeks, so I wanted to make sure I left enough time next time..

Costco 8.5 lb Flat Brisket...

Marinated in Horseradish Mustard & Stubbs Beef Rub...

Smoked at 225 F, using AMNPS - Traeger Hickory Pellets

I put thermometer probe in after 9 hours..    it was still stalled at 163F.    3 hours later, it rose up to about 187.   

I made the mistake of inserting a second temp probe in which immediately registered an IT of 205F.  I panicked and pulled the Brisket because I didn't want it to overcook and fall apart during slicing.  I got a pretty good bark on it and it tasted great, but a little tougher than I wanted it..  t could've used another 45-60 minutes in the smoker...  Next time I'll rely more on the toothpick method to test consistency...  :)

It was close.  Couple of things to watch out for is to make sure you aren't taking the temp of the little bit of point that was on there, and also, that you aren't into the fat as it will read higher.   Toothpick/probe test is definitely the way to go.   Bet your next one is spot on.!

BTW, when you reheat that later, it will taste even better and be more tender.  Just wrap in foil and throw it in a 250 degree oven for between 1-2 hrs.

sounds good, but it didnt last that long... LOL     we left it on the counter and somehow it all disappeared.   :)
