I drilled a hole on each side of the main door and tapped it for thermometer probe cord to run through or a 1/4 inch plug when not in use.

did you pain the bare metal with something to prevent rusting?
 
I did the same thing with mine, drew a pencil line under the bottom of the closed lid, measured down to the top of the grate and put it in the center of the two, ran the plug in covered in never seize to prevent rust.
 
I used a 1/4" plug, probably could have used an 1/8"

Like he said 7/16", although I used 2 smaller bits first and worked my way up to the 7/16" and then tapped the holes
 
you don't wanna use smaller ones first, the larger ones tend to grab and spin in the chuck. Today I removed 3, 10-32 grade 8 bolts that were rusted in by center punching heating with a torch and drilling through, and re-tapping, saved the holes
