I smoked my first meatloaf this evening. Yall were right, meatloaf is very good smoked. In fact, the kiddo even ate some, and liked it! Thats a first. Mama loved it too. I used the recipe from the back of the soup box. 1 lb. ground sirloin 1 lb. ground pork (the pork was my idea, not in recipe) 2 eggs 3/4 cup water 3/4 cup ketchup 1 package lipton onion soup mix 1 green pepper - sauted (also my idea) rubbed ketchup all over it. Smoked it at 250-275 for around 1.5 hours over pecan wood. The internal temp reached 170. Mama made New Orleans potato casserole too. I'm sooooo full!!
