First Jerky!

    So I made my first batch of beef jerky and am thrilled with it! I used eye of round cut 1/4" thick and trimmed of all fat. I used the Cabela's Peppered Jerky kit for seasoning and cure. Smoked it over pecan and apple at about 160-165 for 4.5-5 hours.

    Today I bought a Foodsaver vacuum sealer to pack it in small packages. How long does it last now that it's vacuum packed? And just keep it in the pantry, fridge, freezer?

  2. Glad you like it. I'm not sure how long it will last as that depends on the moisture and the fat content. I have never had any last long enough to go bad.

    You will need to store it in the fridge or freezer. Ours never sits in the freezer more than a few months before it gone. Lasts 3-4 weeks vac packed in the fridge. Up to a year in the freezer.

    Wow, I'm glad I asked! I thought pantry would have been fine...like store bought jerky. Guess. I better move it to the fridge.

    Congrats on your jerky.

    Watch any sharp corners on your jerky, they can puncture the vac bag.
     
  8. I just made my second round of jerky... turned out way better than the first - dried it out until you could build automotive body panels out of it the first time. OOOps! 5# of awesome top round jerky went to work and it lasted 3 days. Guess I will have to make that happen again soon. Congrats on successful jerky! Better get crackin cuz there is lots more of that to be made. LOL
