First food in the smoker

    Well this isn't going to be all that exciting because it's the middle of the week and I don't have time to smoke anything properly, but my father in law is coming over for dinner tomorrow and I wanted to fire up some ABT's for him. It also gives me a reason to make some smoke. 

    I made them up tonight so I can get things going as soon as I get home from work tomorrow. They'll probably end up being an after dinner snack, but that's OK. 

    Here's the queview of the prepped ABT's. 


    There are some mini sweet peppers for the kids too. My 2 year old son doesn't let anyone eat food without him getting a bite, so I thought it would be smart to make something he could eat too.

    Now that looks like a good start, somebody is going to have a tasty treat. Thanks for sharing, now I'm going out to pick some fresh japs and ponder over what I'll stuff them with. It's all good my friend.

    After I made these last night, I experimented with some spice mixtures in some left over cream cheese. I think I have a pretty good mix for the next batch I do. I have a rub that I cam up with for chicken a while ago, and that with a litte cayenne and a couple of other things, it came out pretty tasty. I'll probably put some rub on these before they go in the smoker tonight too.

    Well they tasted great, but I did make a few rookie mistakes. First, I put them parallel to the grates because they sat better that way. I didn't think through what would happen after the peppers got soft. Oops. When I pulled them out, there were a couple lonely pieces of bacon who lost their peppers to the water pan. I also tried to pull them out with tongs which caused another casualty. So we lost a few and they didn't look all that pretty, but they sure tasted good. I was actually surprised at how good they were. I used just a couple chunks of pecan and it gave it a good sweet and lightly smoky flavor. I think I'll be delving into my first pork butt this weekend now.

    Now you made some really like your ABt's they look yummy. I really like some meat with my abt's for some reason they taste better to me. So keep up the good work and smoke on my friend.

    Did they move bacon out of the meat group into it's own food group? [​IMG]  I'm just kidding.. I know what you're saying but I couldn't resist.
