Anyway... after stumbling upon this forum about a month ago, and hungrily reading and viewing many great fatty threads (especially the throwdowns), I figured I'd give it a go. I mean, how can it be bad, right?
I didn't take as many pictures as I should have, but I do have some of the finished product.
The outside:
Pork shoulder, ground medium, seasoned with bratwurst seasoning from Penzey's. About a pound and a half, rested in the fridge for a couple of days
The middle:
Cubed ham from easter, orange bell peppers, onions, garlic, mushroom and sharp cheddar
The wrap:
Bacon weave! This was my first attempt at a bacon weave. I went from memory of what I'd read here, and it was pretty easy. I was really happy with how it turned out.
Smoked it on the NB offset, being too lazy to get out and clean the MB electric smoker. Smoked about 250 - 275, with maple and lump mesquite. Also made my first batch of ABTs, simple - just cream cheese stuffed, some cheddar on top, then wrapped in a half slice of bacon.

I would recommend anyone who hasn't made one of these to try it, you can't really go wrong. Some of the great ones I've read on here make me want to try and go truly hog wild - there are some VERY creative people in this forum.
