I did my first fatty yesterday. The wife says it is definitely a do over. Started with 1 lb. package of sausage and filled with frozen hash browns, chopped onion and Mexican style shredded cheese. Then wrapped with bacon. I got it started a little late and was having trouble getting the smoker up to temp so I had to finish it off in the oven.

Thinking of trying one stuffed with shrimp and imitation crab meat. Any thoughts?

Still a bit cool round these neck of the woods... ever try a blanket over the smoker to help hold heat? A welding type blanket, or a natural fiber type chunk of carpet. Works wonders.

Never tried the seafood fatty... but then again never had a bad one :{)

As for the seafood fatty...I would use real lump crabmeat, unless you prefer imitation crabmeat.

Being from the Chesapeake Bay watershed crabmeat is plentiful!!!
 
Mighty fine fatty! We are thinking about starting a fatty's anonomus group, but the problem is, nobody would ever stay on the wagon long enough to make up a meetin group!

I did one a while ago with lump crabmeat. It wasn't the best I'd ever had. Don't get me wrong, it was still good, but it just wasn't quite what I was expecting.
