Didnt stuff it, just rolled it in McCormick pork rub and put it in. Took about 2 hours at 225. It was great! I sliced it and had egg and sausage sandwiches for breakfast or diced and cooked it with scrabled eggs and cheese. The one thing I did wrong was push my thermo probe all the way in without realizing the end of the probe was only an inch or so from the end of the sausage roll so when I took it out at 160 the middle was not all the way done so I just fried it in the skilled with eggs for breakfast. Will try to stuff a few next time. Also going to make one and dice it up for jumbalya!
