As the title says first Fatty but I will let the photos do the talking. Now for the bacon weave.I wish the bacon was a bit longer. Here is the stuffing next time I will put a lot more in I think. Ready to roll. Nicely rolled. On the kettle and smoked with beech at 250/275F for 4 hours bumped the heat up for the last 30 mins. On the board resting for a bit. Got to say I could not wait to cut into it. Definitely putting more filling in next time but WOW it was very nice if I do say so myself. Thanks for looking, planning my next one now.
