First Fatty with Ground Pork...Need Suggestions!

    Hey Everyone,

    My wife and I want to try and smoke our first fatty today and would love some suggestions for recipes...

    Here's what we were thinking....

    Italian Sausage

    Chopped Spinach


    Roasted Peppers

    All wrapped in bacon.....

    Anyone done one like this or one similar?

    I've read that the internal temp should be around 160?  Is that right? 

    And depending on the size of the fatty that should take about 2 1/2 to 3 hours (give or take...)?
