First attempt at fatties, learned a little for next time the larger was with venison sausage a guy at work gave me needed some pork mixed in to lean had trouble with it crumbling. the other leaked a little had to much filling in both will cut back next time.Filling was scrambled egg, fried potatoes, green pepper and chedar cheese. Came up short on the bacon to get a good weave. Used a little Cajun Shake on the outside

Ready to go in smoker at 225 degrees


2.5 hours out at 165 degrees


Will try to get some pictues when cut in the morning at work.

I do the same thing. I take our venison burger and mix two lbs of venison and mix it will one or half a roll of jimmy deans sausage. Works like a champ but you have to be careful of blow outs as you found out. Tastes wonderful!

Looks great. I Love venison fatties . I take the venison and add pork fat or half pork butt and then add my own spices. Here's a copy cat recipe for JD Breakfast Sausage. You can tweak to your liking.

· 16 ounces ground pork
· 1 teaspoon salt
· 1/2 teaspoon dried parsley
· 1/4 teaspoon rubbed sage
· 1/4 teaspoon ground black pepper
· 1/4 teaspoon dried thyme
· 1/4 teaspoon crushed red pepper
· 1/4 teaspoon coriander
· 1/4 teaspoon MSG (such as Accent flavor enhancer)
 
This all I had left, breakfast for me and son. I wanted to get a better picture but I started slicing everyone started grabbing.
 
That's pretty much what happens at my house too. We have an unwritten rule at my house now- "If Dad is anywhere near food with a camera or a knife, stay as far away from him as possible until he puts the camera and/or knife away and says "Let's eat!'"

Great looking first time fatty. You'll get better and more creative with them as you go along.
