I smoked a turkey today as a practice run for Thanksgiving so I thought while I am learning new things I just as well give a fattie a go. The bacon weave took some time to master but I got it to look pretty decent. I filled the fattie with toppings of my favorite pizza, canadian bacon, pineapple, and jalapenos then topped with cheese.





Into the smoker at 225 with hickory chips. A little over 2 hours later and 170 degrees it was done and ready for a short rest then a tasting. Simply amazing! I cannot wait to try more of these.





If it looks like it is saturated, well, once it was ready for the smoker a injected pineapple juice in it.
 
That's a fine looking fatty. Way to pull off the weave on your first.

How did the juice injection work out? Just a mess or did it do something good for it?

The added juice made it somewhat messy but I was expecting more. I think the majority of it ran out the ends. It did ramp up the pineapple flavor a lot I THINK. I say I think because this is the first fattie I have ever made so not sure what one without juice injection would be like so that is something I need to try so I know for future fatties. I need to hold off smoking for a bit since I am still eating brisket, now turkey and a fattie. Problem is, this first attempt turned out so well I started rummaging through the cabinets, pantries, fridge, and freezers finding things I want to stuff in a chub of sausage now! :)
 
Keep these pictures forever. The first fatty is very "cool". Its an adventure for sure. The bacon weave is cool. Throw one of those out in front of friends. Plate lickin' good.
