This is my first attempt at a fattie and decided to go for a breakfast fattie.  After I took the first picture decided to get rid of some of the eggs and then added some cheddar cheese wrapped it in bacon then wrapped it in cling wrap and is in the fridge.  Haven't decided if I want to smoke it tonight so all I have to do is warm it up in the morning or wait.  May just see how the weather is and go for it.  Also doing ABT's, bacon wrapped andouie sausage and ribs tomorrow.  The neighbor and I are tearing it up on the smoker tomorrow so should be fun.  Have not posted on here in quite a while but have gotten a lot of great advice from this website.

Ingredients are, jimmy dean's pork, pancetta, eggs, onions, potatos and cheddar cheese and bacon strips.  Did not season very much due to being first time and not sure where to go with it.

Any feedback is always appreciated.

That does look like a great start. I like to smoke mine and then after it cools, slice it up and freeze it (after having a bit to be sure of my quality control  lol) and then I can brown it up again when I'm ready to eat it. My mouth is watering! 
 


Completely satisfied with the first try, didn't even have a blow-out.  Will add some more cheese next time.  Already cut up, half in the fridge for tomorrow and other half in freezer for whenever I want, maybe tomorrow.  Gonna start getting everything else ready for tomorrow later on. 
 
Yep definately a great looking fattie for sure, I am sure breakfast is gonna be great and if all the other stuff turns out as good tomorrow is a gonna be a great meal day for you and your neighbor! Have a great weekend!
