I was intrigued by all these fatties, so I decided I'd give it a go for breakfast xmas morning, I was already planning on smoking a turkey so i figured i'd give it a shot.

sliced potatoes, onions, eggs, and rub, just cooked through.

not sure if this is the correct technique or not, but it worked for me!

this was approximately 10 minutes after the previous picture was taken, I've never seen my family act like that before, this was by far the best thing i've taken out of my smoker thus far, thanks to everyone for the good info!
 
An Excellent Fattie if you ask Me, 3 of my favorite foods, Meat, Potatoes, Eggs.

We had one Christmas morning as well. Will be a tradition around here from now on.
 
If I read and visualized right (been wrong before). It looks like ou rolled the weave up into the fattie. Nothing wrong with that, just the first that I have seen. That would give you both crisp and soft bacon, just have to make sure that it's done.
With all that said great looking fatty, I've cooked a few for friends and they really like them.

Very nice your first fattie and it was a big hit too. Now your off to a great start now keep it going with the turkey and you will be the man if the house. So

Thanks for all the kind words, mopper, if I could change one thing about it, it would be that, I think next time I will put the bacon weave on last..you couldn't notice the non crisp bacon in the roll, but i think that bacon barrier on the inside of the fattie prevented it from sticking completely together if that makes sense,.

That's a great idea, we should have everyone who wants in do their own, and then have an impartial member judge :)
