Just got a new MES and did my first ever smoke with a brisket and baby back ribs last Sat.

I smoked the brisket a little to long but still was very good.

Will put up new thread for this weekends smoke
 
I wouldn't fret much about a little over cooked brisket.  They can be tricky and every one seems to act a little differently.  The great thing about low and slow is that if we are off a bit, it is still pretty darn good stuff.

Now for the baby backs?

Oh it was still very good just could of pulled  it off a little sooner was very happy.

The ribs were awesome! posted in the pork section last week

great looking, ill repeat the phrase above about slow cooking; is its still good even if its a lil overcooked (thank goodness or i'd be fired lol
