Just wanted to share a few photos of my first few attempts on the new smoker...First run at ribs didn't result in anything worth wild, had to figure out the qwerks of the unit.
One Saturday I did 2 racks of St. Louis style ribs with Jeff's Naked Rub using the 3-2-1 method. Ribs came out really good, they were fall off the bone which I hear is a sign of over cooking. They had a good bark and flavor so I was very happy with the result. I foiled with brown sugar, honey, parkay.
Next weekend we did a 7.5lb pork but, again with Jeff's Naked Rub, did an overnight cook using the Maverick 733 to monitor (love this thing). Wrapped in foil at 160 degrees. Came off the pit around 200 degrees and sat wrapped in a towel in a cooler till guests arrived about 2.5 hours later, didn't time it right, but was till hot and juicy when pulled.
