first cook on wsm

    Today will be the first run on my new wsm 22 any tips I will be smoking three racks of baby back ribs and two tri tips

    Tri tips will be done before the BBs so rack 'em accordingly.  Take pics!  Have fun!

    Put sand in the water pan & foil over it, it's a temp regulator. Keep your top vent open 100% & regulate the temp from the bottom vents ! Make sure ya have a good accurate therm for the Tri tips, we pull ours at 138* IT & rest for 1/2 hr in foil ! Ya using KBB for fuel ?

    Yes using KKB for this run and was going to use water but if sand is better then will get some of that

    All that on the top rack! That's why I sometimes wish I bought the 22.5. Nice smoke looks like you already love your smoker!

    First smoke on my 18.5 WSM this past weekend. Two 10' butts. Both were awesome. I didn't put anything in the water pan but foil to keep it clean.
