Found some manager specials at Kroger so I thought would try some Chuck Roast. Quick marinade in Moore's with Butt Rub and Tony's and on to the smoker. Also giving me a chance to try out my Maverick ET-73. Very nice so far except for the length of the probe wires. Can't get the unit very far from the smoker - afraid it's going to melt.

Ok now your all rubbed up and into to the frig for the night. so keep up the good Qview and bring some home in the morning.
 
Let us know.Been using maverick/polders etc for years.You will get used to these things.Awesome temp probe the mavericks...........
 
Popped them in the smoker around 6:00 last night. Figured on around 1.5 hrs per pound (4 lb x 1.5 = 6 hrs or midnight). Smoked around 225 using hickory for first 2 hours - too much white smoke (have trouble with the hickory, don't know why) added mesquite and got the thin blue. Sprayed chucks about once an hour for the first 4 hours with a mix of water and Worcestershire. Went to store and got some beef broth and added to the spray mix and continued the once and hour spray until around 1 am. (fell asleep). Woke up at 3:30 it was coming a flood and smoker was down to 170. Meat is at 150. Decide I have too much to do (have to get fruit and dip ready for all day volleyball tournamet - leaving at 7:30) to keep poking along and put chuckies in pan with rest of spray and cover with foil. Back in the smoker, sometime around 4:30, and crank the heat to 315. Take them up around 7:00 at 210 and this is what I got

Out of time, decide to go ahead and shred (they were falling apart anyway) and ended up with this

Daughter, who doesn't like crock-pot roast, tried it and thought it was great. I can say it was the best one I've ever had - no brag just the only one I've ever had

Oh yeah, the Maverick was great made the experience much more enjoyable.
 
Bad News, I had planned on making some enchiladas out of the roast BUT it's all gone. Sammies (for me breakfast, lunch and supper) and just plain pick snacking. Looks like I know what my next smoke will be - chucks Thur night for ENCHILADAS.

Suggestions for improvements?
