Still playing with my Chargriller with SFB on Memorial day I did a beer can chicken and ribs and was very happy with them. I wanted to try some beef but still learning I didn't want to ruin a brisket.
I prepped the chuck roast with a coating of mustard and used my favorite seasoning mix as a rub: Old Bay!
Coated and Rubbed
I had a little bit of a hard time holding temp today as the remnants of Tropical Storm Andrea made it really windy.
Ended up using some live oak that we had on the property.
So I ended up smoking it till it hit about 160 IT, wrapped it it foil and threw in some beer to keep it moist and finished it.
Let it rest in the foil for about 40 min
annnnnd VOILA!
It came out very tender and moist. I've been consistently surprised by how well stuff is coming out.
I cut it along the bias for sandwiches and the old bay gave it a spicy flavor.
So yeah, more adventures soon!
