First cheese smoke

    In the mini.

    Time for more cheese.

    Dust smoker loaded with maple dust.


    Sharp cheddar cheese.


    And mozz.


    Nice cool temp.


    More in 3 hours.

    Mine was too wet today with rain coming next week.

    Well its been 3 hours.  Not much color change.  I know maple doesnt make a big color change but I am gonna leave it in a bit longer.

    Looking good, Adam! I haven't tried smoking mozzarella yet. Do you eat it straight up or use it for cooking?

    Pulled at 3 1/2 hours.  A little color change.   Maple doesn't change the color much but we love the flavor.



    Highest temp was 57.

    Wrapped in plastic wrap tonight and will vac seal tomorrow.
