Picked up this loin for CB




trimmed off fat




used TQ and brown sugar for cure, then put them in food saver bag for long sleep in frig



After a week in frig, smoked with a little brown sugar and CBP



Santa brought me a new slicer

It doesn't get any prettier than that! Congrats on the new slicer too.
 
Hard to decide which looks best, the CB or the Slicer... Decided it was a tie, they both look great...

It works good but you cann't eat a slicer. I like your bacon thou it looks really good and the cure took well too.
 
Thanks Bill, Bassman, rbranster, Beer-B-Q, and mballi. I am very happy with the taste and texture. Made some cb and eggs for supper and could not believe how good this stuff came out. I never had CB like this before. Many thanks to this site and the people on it.
