Recently got a MES 30 and amnps. I had been smoking with a Charbroiled offset which was ok but I wanted something more set and forget. Mostly have done poultry and beef in the past but it's finally time for pulled pork. Rubbed her down with mustard, cowboy rub and brown sugar tonight for an early morning start.

Start of a beautiful thing....

Plan on a long cook! Those butts can take a long time planning on crutching or no foil?

What's crutching? Plans is in at 7am, dinner at 630 hopefully. Only 5.5lbs

Crutching means to wrap it in foil with some liquid at around 165-170 IT. It will cook faster in the foil, but the bark will be softer.

I haven't decided yet, I really wanted to go for some crunchy bark.

Got it going good now, I've got time to decide

Can't believe how long this stall is. I've gone from 158 to 160 in the last hour+

5.5lb butt took 9 hours to get to 165 at 230 degrees. Took it to 203 in the oven at 250 over 2 hours. Sound right or odd?

Your time seems normal (normal is a real rare word used to describe a butt--they're ALL different).  I generally take mine to about 160, or whenever the stall hits, and then foil it and into a 250 degree oven until IT reaches 205--it pulls easily then.

Not bad for the first try. Very moist but I think I'll use finishing sauce next time to go next level
