This is my first attempt at butt. This pic is butt at 165 degrees prior to foiling and apple juice. So far i think it looks pretty good. This is my second smoke ever and I think I am hooked.



When finished, is it ok to pull and add finishing sauce and then put in fridge for tomorrow?

Good looking butt! I would pull it and use the finishing sauce tomorrow. Sometimes, too much vinegar can make the meat mushy if left on too long (JMHO).
 
Should I heat it then use finishing sauce? What temp in oven should I reheat?
 
Put it in a foil or metal pan add a little of the finshing sauce, cover with foil and reheat it at 250 degrees. When its warmed up remove and add a little more sauce right before serving.
 
Should I pull butt out of smoker at 195 degree's?
 
Yes, you can pull it fine @ 195-205. Pics look good. Carry on.

Most of the butts I do are in advance of an event of some sort. I pull em, freeze em in 2 lb vac paks, then reheat, dump into a pan. THEN i add the finish sauce. Yours looks great!

Mike you do what makes Mike happy. That's the beauty of all this smoking. Everyone does it to their own liking. Put your own twist on it.
 
Looks real good Mike, I'm sure it'll be fine which ever way you decide to go..I do go along with not putting the finishing sauce until warming and just before serving..good luck
