Well I did my first butt today. Tell ya what I may have a broken arm and separated rib's, but that didn't keep me from smoking something today.
I did 2 pork butt's they were 8.86 lb and 8.79 lb. Last night I washed them off then I rubbed them down with a heavy coat of mustard , then I put a heavy dusting of RILEY'S All Purpose Seasoning. Anyway back to my q-view after I rubbed them down I covered them and put them in the fridge over night. I put them in the smoker at 4:00 a.m. I sprayed them down with apple juice on the hour every hour. I had to be at work at 7 a.m. so the wife helped me with them. About 9:30 she pulled them out and wrapped them in foil and put them back in the smoker. I got off of work at noon. When I got home I pulled them and checked the temp's they were almost there. I left them in for another hour, pulled them wrapped them each in a heavy towel then put them in a cooler.
Well I keep them like that until 3 p.m. by then we were at my brothers and I unwrapped them and they just fell apart , I had to do very little pulling .
